Rainbow Ice Cream Cupcakes

Is it cake? Is it ice cream? These special treats are super fun to make, and the kids love them.

Ingredients:

* 12 Flat-base ice cream cones
* 200g softened butter
* 200g self-raising flour
* 1 tsp vanilla extract
* 200g golden caster sugar
* 2 large eggs, beaten
* Gel food colouring (red, orange, yellow, green, blue, purple)
* Whipped cream
* Sprinkles
* Cherries

Method: 

1. Preheat over to 180°C (160° Fan).
2. Put the butter, flour, vanilla, sugar and eggs in a mixing bowl. Beat with an electric whisk until smooth.
3. Place cones into an over-safe cupcake cone holder (toddle.fun/cakerack). A muffin tin may work, but balancing the cones can be tricky.
4. Divide cake mixture into 6 small bowls, Add the gel food colouring, one colour for each bowl, and mix. 
5. Fill the cones with about a spoonful of each colour until the cone is 3/4 full. Start with purple at the bottom, then blue, green, yellow, orange and finally red.
6. Mix your whipped cream (if making fresh) into peaks.
7. Add to a piping bad with a large star tip. Pipe onto each cool cake cone, add sprinkles and a cherry on top.
